Abstract
The human olfactory system has been an important tool for developing our species. However, our biological nose has several limitations regarding sensitivity and aroma quantification. Electronic noses, also known as e-noses, have emerged as a cutting-edge technology with a wide range of applications spanning industries such as food, healthcare, environmental monitoring, industrial applications, and security. This book chapter provides a comprehensive overview of the principles of operation of both biological and e-noses, the sensing techniques applied to this technology, the cognitive interpretation of data, applications, the impact of using e-noses, and future directions.
