Davide Giacalone is an Associate Professor and Principal Investigator at the Faculty of Engineering, University of Southern Denmark (SDU), and a member of SDU FOOD MATTERS within the SDU Biotechnology section. With a background in sensory and consumer science, his research examines consumer acceptance of food technologies to enable healthier, more sustainable foods.

Areas of special interest and proficiency include inter-individual differences in food perception and acceptance, consumer product testing methodology, and the application of sensory methods in R&D. Recent projects have focused on plant-based alternatives and alternative proteins. He currently coordinates the Horizon Europe project FlavourFerm (GA 101181661) and leads work packages and tasks in several other projects at the national and EU levels.

Davide is Associate Editor of Food Quality and Preference and sits on the scientific committees of the Pangborn Sensory Science Symposium and the EuroSense conference. He has authored 80+ peer-reviewed papers (h-index: 36, Scholar), has co-edited two books, and is listed in the Stanford–Elsevier global top 2% most-cited scientists (2023–2025).
